Loco Moco

Yields appetizers


1 white rice burger
2 tsps. oil (1 tsp. to fry the rice burger, 1 tsp. to fry the meatballs)
1 T mayonnaise
1 T Sriracha sauce
3/4 cup ground beef
3/4 cup ground pork
1/2 egg
3/4 tsp. ginger, grated
1/2 T tamari sauce
1/2 T potato starch
To taste, salt and pepper
2 T Japanese sake
8 quail eggs
Broccoli florets for garnish
Mini tomatoes for garnish
Chives for garnish


  1. Heat oil in a skillet. Fry the rice patty on one side over a medium flame for 3 minutes. Cut into 8 bite-size pieces.
  2. Mix the mayonnaise and Sriracha together. Divide among 8 Chinese soup spoons. Place a rice patty bite atop the mayo-Sriracha.
  3. Knead together the beef, pork, egg, ginger, tamari sauce, potato starch, salt and pepper until pale and viscosity is reached. Form into 8 meatballs. Fry in a skillet adjusting the heat until the meatballs are well done. Surround the meatballs with sake and lightly steam over a medium flame for 5 minutes.
